Ever since we got our instant pot we have been trying all sorts of dishes and let me tell you, you can really save so much time and make such delicious meals. This Instant Pot Beef Bourguignon has become one of our family favorites! We use a 6 quart instant pot . It’s a great size for everything from family meals to desserts.
Instant Pot Beef Bourguignon is all about tender beef, hearty vegetables, everything smothered with the absolutely most flavorful and delectable wine-based sauce! All cooked in less than 45 minutes!!

WHAT YOU’LL NEED TO MAKE INSTANT POT BEEF BOURGUIGNON:

5 carrots; peeled and quartered

1 box white pearl onions; peeled

2 lbs beef stew meat

2 potatoes; diced
-
2 bay leaves
-
2 tablespoons minced garlic
-
2 tablespoons bacon grease or olive oil

2 cups Chianti wine
-
1 cup beef stock
-
1 tablespoon cornstarch (if needed)

1/4 cup beef stock (if needed)
The ingredients for this dish are super simple. Ingredients that are in our fridge and pantry all the time. That is how we like to cook most of our meals nothing fancy in our house.

Place bacon grease or oil into the instant pot. Turn on saute mode.

Add beef and onions then saute until browned. Turn off saute mode.

Add in carrots and potatoes. Top with wine, garlic, broth, and bay leaves.

Set to high pressure and cook for 35 minutes. Release pressure when the instant pot is done counting.

Optional: remove all vegetables and meat to a bowl. Turn instant pot to saute mode. Whisk cornstarch with 1/4 cup beef broth. Add in cornstarch to the broth/wine to make a gravy. Bring to a boil and stir often until thickened. Turn off saute mode.

Add vegetables and meat to broth. Serve!
