Instant Pot Jerk Chicken and Vegetables

Instant Pot Jerk Chicken and Vegetables is no only tasty and one of our favorite go healthy meals but it is so simple to make and super easy. Serve this over jasmine rice for a complete meal! 



Truly this dish is full of flavor with only 2 WW Smart Points ( if your counting points, that’s very important!)  all without feeling like you are eating diet, healthy food. 

We use a 6 quart instant pot . It’s a great size for everything from family meals to desserts. 


Nobody likes eating healthy food that tastes like “healthy” food. you want it to taste good. The healthy part is a bonus.  Believe me this dish has so much flavor the word healthy won’t even cross your mind. You will just want to keep on eating. Keep in mind this is a bit spicy but you can adjust the spice to suit your taste.


Instant Pot Jerk Chicken and Vegetables is a one pot meal made complete with homemade jerk chicken seasoning using ingredients from your spice drawer. We love to make our own spice blends and have them on hand when we want to whip something like this up. But you can always buy a good jerk seasoning if you like instead. 


You will start by making your seasoning then season your chicken for 30 minutes. That’s when you will cut your vegetables. When the chicken is marinated add it to your instant pot.


You will add the rest of the ingredients and pretty soon you will have a yummy dinner. You can make this without the vegetables if you like just using the chicken and rice but the vegetable add delicious flavor and color to this dish.

  • 3 medium chicken breasts, boneless and skinless
  • ½ med head cabbage
  • 1 med zucchini
  • 1 red pepper
  • 1 yellow pepper
  • 1 med onion, diced
  • 1 tsp minced garlic
  • 2 tbsp olive oil
  • 3 tbsp Jamaican Pickapeppa Sauce
  • 3 tbsp soy sauce
  • 2 tbsp jerk seasonings

Jerk Seasoning

  • 2 tsp onion powder
  • 2 tsp cayenne pepper
  • 1 tsp paprika
  • ½ tsp dried crushed red pepper
  • 2 tsp dried thyme
  • 1 tbsp garlic powder
  • 2 tsp dried parsley
  • ½ tsp black pepper
  • 2 tsp salt
  • 2 tsp sugar
  • ¼ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp ground allspice


  • 1.Make your jerk seasoning.
    2. Cut the chicken into thin strips about 1-inches long. Season the chicken 2 tbsp. jerk seasoning in a sealed plastic bag. Marinate the chicken in the refrigerator for 30 minutes.
    3. While the chicken is marinating, cut up the cabbage cross-wise into thin strips. Cut up the red & yellow peppers and set aside.
    4. Combine the Pickapeppa Sauce and soy sauce in a small bowl. 
    5. Set the Instant Pot to saute' and add 2 tablespoons oil. Add the minced garlic.
    6. When the oil is ready, add the chicken and saute' until it turns light brown.  Add the cabbage, peppers, zucchini, and onion. Turn the Instant pot vent to seal.
    7. Set to manual for 6 minutes. Do a quick release.
    8. Add the sauce in the entree. Stir to combine.
    9. Serve hot with rice.
