Ingredients

  • 2 cups broccoli florets cooked and chopped
  • ¾ cup shredded cheddar cheese
  • ½ cup bread crumbs
  • ¼ cup onion finely chopped
  • 2 eggs beaten
  • ¼ tsp garlic powder
  • salt and pepper

Instructions

  • Cook broccoli florets in boiling water until just soft. Drain and let cool.
  • Chop broccoli finely. You need about 2 cups. 
  • Preheat oven to 350.
  • In a large bowl add broccoli, cheddar cheese, eggs, bread crumbs,onion and seasonings. Mix together well.
  • Place parchment paper on a baking sheet. Drizzle oil on parchment paper and spread it around so it covers the parchment paper. 
  • Start forming balls with your broccoli mixture.  Depending on how big or small you make the balls you could end up with 16-20 balls. 
  • Bake for about 30 minutes turning balls after 15 minutes.
