Ingredients

  • 2 cups broccoli florets, cooked and chopped
  • ¾ cup shredded cheddar cheese
  • ½ cup bread crumbs
  • ¼ cup onion, finely chopped
  • 2 eggs, beaten
  • ¼ tsp garlic powder
  • salt and pepper

Instructions

  • Cook broccoli florets in boiling water until just soft. Drain and let cool.
    Chop broccoli finely. You need about 2 cups. 
    Preheat oven to 350.
    In a large bowl add broccoli, cheddar cheese, eggs, bread crumbs,onion and seasonings. Mix together well.
    Place parchment paper on a baking sheet. Drizzle oil on parchment paper and spread it around so it covers the parchment paper. 
    Start forming balls with your broccoli mixture.  Depending on how big or small you make the balls you could end up with 16-20 balls. 
    Bake for about 30 minutes turning balls after 15 minutes.
