In a large bowl, use an electric mixer to beat the butter, brown sugar, and sugar together until light and fluffy. Add in the eggs and vanilla and continue to beat for an additional minute.

Add in the flour, baking soda, and salt and mix until just combined. Use a spatula to stir in the dried cranberries and ½ c of the white chocolate chips.

Bake the cookies in the preheated 350-degree oven for 20-22 minutes. Then cool completely.

Once the cookie bars are cooled, melt the remaining white chocolate chips in the microwave and use a Ziploc bag or piping bag to drizzle the melted chocolate over the top of the bars. Allow it to harden before serving.

Storage – Store the bars in an airtight container at room temperature for up to four days. Just note that the longer they sit, the more likely they will dry out.

Freezing – You can also freeze these bars by wrapping them individually in plastic wrap and storing them in a freezer-safe container for up to 3 months. Just thaw at room temperature before enjoying it again.

Ingredients

  • ½ cup butter softened
  • ½ cup brown sugar
  • cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups + 2 tablespoons flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup dried cranberries
  • ¾ cup white chocolate chips divied

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl, use an electric mixer to beat the butter and brown sugar and sugar together until light and fluffy.
  • Add in the eggs and vanilla and continue to beat for an additional minute.
  • Add in the flour, baking soda and salt and mix until just combined.
  • Use a spatula to stir in the dried cranberries and ½ c of the white chocolate chips (reserve ¼ c for the top).
  • Press the cookie dough into an 8 x 8 pan (either nonstick or use cooking spray to coat the pan) and place in the oven and bake for 20-22 minutes until golden brown.
  • Remove and allow to come to room temperature.
  • In a small bowl, melt the remaining white chocolate chips in short bursts in the microwave, stirring frequently until fully melted.
  • Pour into a ziplock bag and cut a small corner off and drizzle over the top of the cookie bars.
  • Slice into equal sized pieces and enjoy!
