Cranberry White Chocolate Cookie Bars

These Cranberry White Chocolate Cookie Bars are chewy, delicous, and bursting with tangy cranberries. Then they are finished off with a drizzle of white chocolate to make them even better.

Equipment

Ingredients

  • ½ cup butter softened
  • ½ cup brown sugar
  • cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups + 2 tablespoons flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup dried cranberries
  • ¾ cup white chocolate chips divied

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl, use an electric mixer to beat the butter and brown sugar and sugar together until light and fluffy.
  • Add in the eggs and vanilla and continue to beat for an additional minute.
  • Add in the flour, baking soda and salt and mix until just combined.
  • Use a spatula to stir in the dried cranberries and ½ c of the white chocolate chips (reserve ¼ c for the top).
  • Press the cookie dough into an 8 x 8 pan (either nonstick or use cooking spray to coat the pan) and place in the oven and bake for 20-22 minutes until golden brown.
  • Remove and allow to come to room temperature.
  • In a small bowl, melt the remaining white chocolate chips in short bursts in the microwave, stirring frequently until fully melted.
  • Pour into a ziplock bag and cut a small corner off and drizzle over the top of the cookie bars.
  • Slice into equal sized pieces and enjoy!
