Easy Cheesy Pesto Chicken Bake is a  delicious and easy mid week meal. Just a few minutes of prep and 30 minutes in the oven to make this Cheesy Pesto Chicken Bake one of my go to weeknight meals.

Easy Cheesy Pesto Chicken Bake is really such an easy meal to prepare. All you need is chicken breasts, pesto, either your own homemade or a good store bought brand, fresh tomatoes and fresh mozzarella cheese.  How simple is that?!!  I like to butterfly my chicken breasts , salt and pepper them then add some pesto and mozzarella cheese to the inside.

Add the pesto, then add some mozzarella cheese.

 

Then just simply fold over the chicken breast to close or use a tooth pick if you need to.  Transfer the chicken breast to a glass baking dish that has about 2 teaspoons olive oil.   Then you will spread more pesto over the chicken breast, add slices of mozzarella cheese and sliced fresh tomatoes on top.

Ingredients

  • 3 chicken breasts butterflied
  • 1 6 oz. jar basil pesto or your own homemade
  • 2-3 medium fresh tomatoes sliced
  • fresh mozzarella cheese about 4-6 oz.
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350° F.
  • Place chicken breast on a cutting board and buttery. Then salt and pepper to taste
  • Add about 1/2 tsp pesto and spread into chicken breast then add mozzarella cheese (about 1/3 oz or so).
  • Fold chicken breast over or secure with toothpicks
  • Place chicken breasts in a baking dish.
  • Use a spoon to cover chicken with pesto.
  • Top each chicken breast with mozzarella cheese and 3 slices of tomatoes.
  • Bake for 30 -35 minutes depending on how large your chicken breasts are, or until chicken is no longer pink in the middle.
