Easy Creamy Pasta Salad is a great go to summer side dish. It comes together in a snap and can be made ahead of time. as a matter of fact it tastes better if you make it in the morning or even the day before you need to serve it.

The base of the dressing is is extra virgin olive oil and red wine vinegar along with sugar, oregano, salt and pepper and just a bit of mayo. Very simple but its just enough to give this Easy Creamy Pasta Salad the perfect flavor  it needs.

Ingredients

  • 1 lb rotini pasta or pasta of your choice
  • 1 orange pepper,cleaned and chopped
  • 1 red pepper, cleaned and chopped
  • ½ small red onion, chopped
  • ½ english cucumber, quartered and sliced
  • 12 black olives, sliced

For The Dressing

  • ½ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • 1 tbsp sugar
  • 1 tbsp oregano
  • 1 tsp garlic powder
  • 2 tbsp mayonnaise
  • salt and pepper to taste

Instructions

  • Mix together dressing first and set aside  making sure sugar is dissolved completely.
    Cook pasta according to box directions. I like mine al dente.
    While pasta is cooking cut the vegetables for the pasta salad and place them in a med- large bowl. Large enough to mix the pasta salad.
    When pasta is cooked drain pasta well and rinse under cold water. 
    Add pasta the vegetables . Mix together. Then pour dressing over pasta a little at a time. 
    You may find you like your pasta salad with a little less dressing. You can always add more.  Toss pasta salad as your pouring the dressing. 
    We normally chill the pasta salad for a few hours and sometimes overnight. 
    This recipe can easily be doubled or add more vegetables!
