French Lemon Butter Cookies
Equipment

Ingredients
- 1 cup butter softened
- 1 cup powdered sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1 teaspoon lemon zest
- ½ teaspoon salt
- 2 ¼ cups flour
- ¼ cup sugar
Instructions
- In a large bowl, beat the butter and powdered sugar until light and fluffy.
- Add in the egg yolks, extracts and lemon zest. Beat until fully incorporated.
- Add in the flour and salt and mix, making sure to scrape the sides and bottom to make sure all ingredients are thoroughly mixed.
- Place a long piece of plastic wrap on the counter and scrape the dough into the center and form a long roll, about 1-2” diameters.
- Wrap completely in plastic and place in the refrigerator for about 45 minutes to firm up the dough.
- Preheat the oven to 350 degrees.
- Unwrap the dough and sprinkle the sugar over the dough and roll it around to coat it entirely in sugar.
- Slice the dough into thin pieces, about ¼” thick and place on a baking tray.
- Place the cookies in the oven and bake for 10-12 minutes, until lightly golden brown. Do not over bake!
- Remove and let cool on a rack.
