Ingredients

  • 1 cup butter softened
  • 1 cup powdered sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • 2 ¼ cups flour
  • ¼ cup sugar

Instructions

  • In a large bowl, beat the butter and powdered sugar until light and fluffy.
  • Add in the egg yolks, extracts and lemon zest. Beat until fully incorporated.
  • Add in the flour and salt and mix, making sure to scrape the sides and bottom to make sure all ingredients are thoroughly mixed.
  • Place a long piece of plastic wrap on the counter and scrape the dough into the center and form a long roll, about 1-2” diameters.
  • Wrap completely in plastic and place in the refrigerator for about 45 minutes to firm up the dough.
  • Preheat the oven to 350 degrees.
  • Unwrap the dough and sprinkle the sugar over the dough and roll it around to coat it entirely in sugar.
  • Slice the dough into thin pieces, about ¼” thick and place on a baking tray.
  • Place the cookies in the oven and bake for 10-12 minutes, until lightly golden brown. Do not over bake!
  • Remove and let cool on a rack.
