Our stabilized whipped cream is rich, creamy, and sweet, like all good whipped cream should be. It’s also the best way to make sure your cakes, cupcakes, and other sweet treats remain beautifully decorated for more than a few hours!

Whipped cream is the perfect topping for cakes, pies, and cupcakes, but the problem is that it never stays as pretty as it is when you first decorate with it. We got tired of our whipped cream looking like Frosty the Snowman on a warm day, so we started making this stabilized whipped cream. It uses gelatin rather than cornstarch, and we think it’s the best version ever.

🔪 How to Make Stabilized Whipped Cream
- Whisk the gelatin and water and set aside.
- Beat the remaining ingredients with a hand mixer on high speed in a large mixing bowl until thickened but without peaks.
- Heat the gelatin mixture in the microwave until melted. Slowly drizzle the gelatin into the whipped cream while beating it on medium speed.
- When the gelatin is fully incorporated, increase the speed to medium-high and beat until stiff peaks form.
💭 Tips
- It’s very important NOT to beat the whipped cream to peaks before adding the stabilizer. You want the gelatin mixed in before you make the final product so it can do its job.
- Drizzle the melted gelatin into the whipped cream as slowly as possible, so it doesn’t clump up in the whipped cream.
- It’s best to decorate your baked goods with this whipped cream when it’s freshly made. However, if you give it a good mix just before using it, it still works throughout its lifespan.

Refrigerate this whipped cream for up to 3 days in the refrigerator. Stir well before using it.

Instructions
