🔪 How to Make Strawberry Bread

Make the bread batter by mixing the wet ingredients, and dry ingredients in separate bowls and then combine the two.
In a separate bowl mix the strawberries and flour. Then add the floured strawberries and pecans to the batter and fold gently.
Pour the batter into the loaf pan and then bake in the preheated oven for 55-60 minutes.
In a small bowl make the glaze, and drizzle it over the top of the cake.

Strawberry Bread

Ingredients
- ¾ cup sugar
- ½ cup milk
- ½ cup oil
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour + 2 Tbsp
- 2 teaspoon baking powder
- 1 teaspoon salt
- ½ cup chopped pecans
- 2 cup chopped strawberries
Glaze:
- ⅓ cup chopped strawberries
- ½ teaspoon vanilla
- 2 tablespoons melted butter
- 2 cups powdered sugar
- 1-2 tablespoon heavy cream
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, whisk the sugar, milk, oil, egg and vanilla until smooth.
- In a small bowl, whisk the 2 cups of flour, baking powder.
- Add the dry ingredients into the wet and mix until smooth.
- In a small bowl, toss the strawberries with the 2 tablespoons of flour until the berries are coated.
- Add the strawberries and pecans to the batter and gently fold in until well mixed.
- Pour into a 9 x 5 loaf pan (either non-stick or sprayed with baking spray).
- Bake for 55-60 minutes, or until a skewer comes out clean.
- Remove and allow to rest in the pan for 10 minutes before turning out onto a cooking rack to completely come to room temperature.
- To make the glaze, add the strawberries, vanilla, melted butter, and powdered sugar into a bowl and mix.
- Add heavy cream as needed to thin out the glaze until it’s able to be drizzled over the top of the bread.
