These Banana Pudding Cups are a delicious bite-sized treat that will wow your friends and family with it's vanilla wafer crust, banana pudding filling, and beautiful meringue topping.

– Eggs – Butter – Vanilla wafers – Ripe bananas

In a small bowl, mix sugar, cornstarch, and salt.

In a medium saucepan, whisk egg yolks with milk, then add sugar mixture and cook over medium heat until thickened.

Remove from heat, stir in butter and vanilla, and let cool slightly. Using a mini muffin pan, place a wafer and banana slice in each cup, then spoon pudding on top.

In another bowl, beat egg whites and sugar until stiff peaks form, then pipe over each bite.

Bake until slightly browned, and serve warm or chilled.
