This Loaded Cornbread Casserole is a delicious and hearty side dish that will be the star of any meal. It’s easy to make and packed with flavor, making it a popular choice for potlucks, family gatherings, or a simple weeknight dinner.

– butter – cream cheese – Jiffy Cornbread Mix – canned creamed corn – can corn, undrained – shredded cheddar cheese – scallions – cooked bacon


To prepare a delicious cornbread casserole, preheat your oven to 350 degrees. In a large mixing bowl, combine butter and cream cheese, melting them together in the microwave at 30-second intervals until smooth. Whisk the mixture until creamy.



Add cornbread mix, creamed corn, undrained corn, 1 cup of shredded cheddar cheese, bacon, and scallions to the bowl. Reserve some scallions and bacon for the top if desired.



Transfer the mixture to a baking dish, top with the remaining cheese, and bake in the preheated oven for 35-45 minutes until golden and a toothpick inserted in the middle comes out clean. Finish by garnishing with more scallions before serving.
