8oz. cream cheese softened
8cupspowdered sugar
1tspmint extract
several drops of green gel food color
1cupheavy whipping cream
2cupssemi-sweet chocolate chips
Instructions
1. Using a standing mixer, cream together the cream cheese and 2 cups powdered sugar2. Mix until combined the extract and gel food coloring until you get a rich green color3. Gradually beat in the remaining powdered sugar4. Line a cookie sheet with parchment paper5. Using a small ice cream scooper, scoop dough and roll into a ball. Place onto the cookie sheet. .Repeat step with remaining dough6. Using a rounded teaspoon, make indents into all dough balls7. Place cookie sheet into the fridge overnight8. Place the chocolate chips into a heatproof bowl9. Place the heavy whipping cream into a small pot and bring to a simmer10. Pour hot heavy whipping cream over the chocolate chips and allow to sit for a minute. Whisk until smooth11. Spoon some chocolate ganache into the cavity of each cookieAllow to slightly harden for 3 hours before enjoying!
