Ingredients
1cupsugar plus 2 more cups to roll the cookie in
1cuplight brown sugar
1cupcreamy peanut butter
½cupshortening
½cupunsalted sweet cream butter, softened
1large egg
2 ½cupsflour
1 ½tspbaking soda
1tspbaking powder
½tspkosher salt
1cuppeanut butter chips
1cupcrushed nutter butters
1cupstrawberry jam
flavor injector
Instructions
1. Preheat oven to 350 degrees and line two cookie sheets with parchment paper2. Using a standing mixer, beat together the sugar, brown sugar, peanut butter, shortening, butter, and egg until combined and smooth3. In a large bowl, whisk together the flour, baking soda, baking powder, and salt4. Gradually beat in the dry ingredients into the wet until combined and a dough forms5. Mix in 1/2 C peanut butter chips and 1/2 C crushed nutter butters until combined6. Using a small ice cream scooper, scoop out some dough onto your handsRoll the dough into a ball7. Combine the remaining cups of peanut butter chips and nutter butters into a bowl. Roll the cookie dough into the mixture8. Repeat steps with 11 more cookies9. Place the cookies into the oven and bake for 11 minutes10. Place the strawberry jam into a heat safe bowl and place into the microwave for 30 seconds until soft. Fill the flavor injector with the jam11. Once the cookies come out of the oven allow to cool for a few minutesInject the cookies with the jam until the top cracks
