Jalapeno Corn Casserole

Ingredients

  • 1 8,5 oz.  package cornbread mix

  • 1 cup sour cream

  • ½ cup butter, melted
  • 1 15 oz. can creamed style corn (undrained)

  • 1 15 oz. can corn (drained)

  • 2  eggs, beaten 

  • ¼ tsp. black pepper

  • ¼ tsp. salt
  • 1 large jalapeño, diced

Instructions

  • Preheat oven to 350F. 

  • Grease an 8 x 8 baking dish with butter or non-stick cooking spray.

  • In a large mixing bowl, combine the sour cream, corn, creamed corn, melted butter and eggs. Add cornbread mix, salt and pepper and stir.

  • Pour the mixture into the prepares baking dish.

  •  Bake 45-60 minutes until sides are golden and the middle has set.
