Jalapeno Corn Casserole

- 1 8,5 oz. package cornbread mix
- 1 cup sour cream
- ½ cup butter, melted
- 1 15 oz. can creamed style corn (undrained)
- 1 15 oz. can corn (drained)
- 2 eggs, beaten
- ¼ tsp. black pepper
- ¼ tsp. salt
- 1 large jalapeño, diced
Preheat oven to 350F.
Grease an 8 x 8 baking dish with butter or non-stick cooking spray.
In a large mixing bowl, combine the sour cream, corn, creamed corn, melted butter and eggs. Add cornbread mix, salt and pepper and stir.
Pour the mixture into the prepares baking dish.
Bake 45-60 minutes until sides are golden and the middle has set.
