How do you know if this corn casserole is cooked and ready to be removed from the oven?

Treat this dish as you would with any type of baking dish. If you’re uncertain as to if this casserole dish is cooked all the way through, simply insert a butter knife or toothpick into the middle of the casserole. If it comes out clean, it means that it’s done and time to remove from the oven.

However, if there is still batter on it, you’ll want to make certain that you continue cooking it and checking every few minutes. Just remember because this uses cornbread as a base for this casserole you need the knife to come out clean.

You can, absolutely. Just make certain that you drain your pickled jalapenos as best possible since they more than likely will have some liquid with them as well.  Using pickled jalapenos will also have this recipe tasting a tiny bit different, too…but regardless of what you use, it’s certain to still taste delicious!

  • 1 8,5 oz.  package cornbread mix

  • 1 cup sour cream

  • ½ cup butter, melted
  • 1 15 oz. can creamed style corn (undrained)

  • 1 15 oz. can corn (drained)

  • 2  eggs, beaten 

  • ¼ tsp. black pepper

  • ¼ tsp. salt
  • 1 large jalapeño, diced


  • Preheat oven to 350F. 

  • Grease an 8 x 8 baking dish with butter or non-stick cooking spray.

  • In a large mixing bowl, combine the sour cream, corn, creamed corn, melted butter and eggs. Add cornbread mix, salt and pepper and stir.

  • Pour the mixture into the prepares baking dish.

  •  Bake 45-60 minutes until sides are golden and the middle has set.
