Cheesy Taco Pasta

This easy Cheesy Taco Pasta is a cinch to throw together for a weeknight meal. Everyone will be begging for seconds for this comfort food!

Ingredients

  • 1lb. ground beef
  • 1/2 lb. shell pasta
  • 2 tablespoon. olive oil
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup prepared salsa
  • 1 15oz. can of black beans
  • 1 cup shredded cheddar cheese ( up to 2 cups)

Instructions

  • In a large pan bring water to boil. Add shell and cook Drain and set aside.
  • Cook ground beef until browned, drain excess fat and set aside.
  • Heat olive oil and add chopped onion, bell pepper, and spices, stir. 
  • Add ground beef back into pan and then add black beans and stir thoroughly  
  •  Add salsa, 1 cup of water, salt, pepper, and stir again. 
  • Add shells to ground beef mixture, stir, add cheese, stir again, and serve.
