Equipment

  • small bowl or mason jar

Ingredients

  • 6 cups chopped kale
  • 4 cups shredded green cabbage
  • ¼ cup roasted almond slivers

For the dressing:

  • cup olive oil
  • ¼ cup apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 3 teaspoons honey
  • 1 teaspoon finely minced shallot
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Place all ingredients for the dressing into a blender or food processor until smooth. Set aside.
  • Toss together the ingredients for the salad.
  • Just prior to serving, toss the salad with the dressing. Serve immediately.
