Ingredients

  • 1.5 pounds carrots
  • 4 tablespoons butter
  • ¼ cup maple syrup
  • 3 tablespoons brown sugar
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 350° F and cover a baking sheet with aluminum foil.
  • Peel the carrots and slice them all lengthwise then place them on the prepared baking sheet in a single layer.
  • In a microwave-safe small bowl, add the butter and microwave for 30 seconds.
  • Add in maple syrup, brown sugar, sea salt, and black pepper and mix together well.
  • Brush the sliced carrots with the butter mixture, or dip each carrot slice in brown sugar mixture and place on a baking sheet.
  • Bake for 15 – 20 minutes or until fork-tender.
  • Remove them from the oven and garnish with chopped parsley if desired.
