Ingredients

  • 1 ½ pounds sausage kielbasa
  • 1 pounds fingerling potatoes
  • 10 ounces of frozen green beans
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • ½ onion
  • 3 cloves garlic
  • ½ teaspoon cajun seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes
  • ¼ cup water

Instructions

  • Preheat oven to 400 degrees and melt the 2 tablespoons of butter in baking dish.
  • Slice kielbasa into ¼ inch slices
  • Place kielbasa in skillet with ¼ cup water and cook on medium high heat for about 3-4 minutes on each side, enough to crisp up.
  • Wash and cut fingerling potatoes in half or quarters, bite size pieces.
  • Dice onions and garlic.
  • IN a large bowl, combine potatoes, green beans, onions, and garlic. Drizzle olive oil on top and sprinkle with seasonings.
  • Mix well to combine.
  • Empty the bowl into the baking dish.
  • Cover baking dish with foil and bake for 40 minutes or until potatoes are tender.
  • Serve hot and enjoy!
