BBQ Chicken Quesadillas

Ingredients

  • 3 cups cooked chicken shredded
  • 1 ½ cups Mexican-style shredded cheese blend
  • 2 tablespoons olive oil
  • 3 large tortillas
  • 15 ounces corn drained and rinsed
  • 1 cup BBQ sauce
  • 3 tablespoons cilantro
  • cups Sour cream optional
  • 1 jalapeno optional

Instructions

  • In a bowl, combine the shredded chicken and BBQ sauce. Set aside.
  • Prepare the quesadillas by laying a tortilla flat. Add a layer of BBQ chicken to half of the tortilla. Top with corn and a sprinkle of cheese. Fold the other half of the tortilla over to close it. Repeat with the remaining tortillas.
  • Heat a pan over medium heat with olive oil. Place a quesadilla in the pan and cook for 2 to 4 minutes. Flip and cook for another 2 to 4 minutes until golden brown.Remove from the pan and repeat with the remaining quesadillas.
  • Cut each quesadilla in half.
  • Top with dollops of sour cream and sliced jalapeños, if desired. Garnish with chopped cilantro and enjoy!
