2Ripe Bananas
1 ½CupsFresh Blueberries
⅓CupVanilla Yogurt
1 ½CupsFlour
¾CupBrown Sugar
¼teaspoonSalt
1teaspoonBaking Soda
½CupButterMelted
2Eggs
1teaspoonVanilla Extract
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, add the bananas, yogurt, brown sugar, eggs, vanilla, and butter. Mix together with a spoon until well combined.
In a medium size bowl, whisk together the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix well.
Toss the blueberries with about a tablespoon of flour. This will prevent the berries from sinking. Fold 1 ¼ Cup of blueberries into the batter, save ¼ cup of blueberries for the next step.
Line a loaf pan with parchment paper and pour in the batter. Top with the remaining ¼ cup of blueberries.
Place in oven for 1 hour or until a toothpick comes out clean.
