Blueberry Bread with Yogurt

This blueberry bread with yogurt is super moist and tender, thanks to yogurt and mashed bananas, and loaded with fresh blueberries.

Ingredients

  • 2 Ripe Bananas
  • 1 ½ Cups Fresh Blueberries
  • Cup Vanilla Yogurt
  • 1 ½ Cups Flour
  • ¾ Cup Brown Sugar
  • ¼ teaspoon Salt
  • 1 teaspoon Baking Soda
  • ½ Cup Butter Melted
  • 2 Eggs
  • 1 teaspoon Vanilla Extract

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, add the bananas, yogurt, brown sugar, eggs, vanilla, and butter. Mix together with a spoon until well combined.
  • In a medium size bowl, whisk together the flour, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Toss the blueberries with about a tablespoon of flour. This will prevent the berries from sinking. Fold 1 ¼ Cup of blueberries into the batter, save ¼ cup of blueberries for the next step.
  • Line a loaf pan with parchment paper and pour in the batter. Top with the remaining ¼ cup of blueberries.
  • Place in oven for 1 hour or until a toothpick comes out clean.
  • Let cool and enjoy!
