Cajun Chicken Legs

Ingredients

  • 12 chicken legs
  • ½ cup honey
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons smoked paprika
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1 tablespoon garlic powder
  • ¼ cup vegetable oil
  • Scallions or parsley for topping optional

Instructions

  • Line a large baking sheet with aluminum foil and set aside. Preheat the oven to 400°F.
  • In a large bowl, add the chicken legs, honey, Cajun seasoning, smoked paprika, paprika, chili powder, garlic powder, and vegetable oil.
  • Mix until each chicken leg is fully coated.
  • Lay the chicken legs out on the prepared baking sheet.
  • Scoop some of the mixture from the bottom of the bowl and drizzle it over each leg.
  • Bake for 40 to 45 minutes, until the chicken is cooked through and the skin has color.
  • Remove from the oven and baste with the juices from the bottom of the pan.
  • Top with chopped scallions or parsley if desired, then serve.
