Equipment

  • large bowl
  • sharp knife or apple corer
  • 9x13 baking dish
  • medium saucepan
  • pastry butter

Ingredients

  • 9 apples peeled, cored & sliced
  • cup brown sugar
  • cup sugar
  • 2 teaspoons lemon juice
  • 2 teaspoons cornstarch
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup chopped pecans

For the caramel sauce:

  • ¾ cup butter
  • 1 cup brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla

For the crust:

  • 3 cups flour
  • cup brown sugar
  • cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup butter
  • cup boiling water

Instructions

  • Preheat the oven to 350 degrees. Peel, remove the core slice all the apples, and place them in a large bowl.
  • Add the lemon juice and coat the apple slices to prevent browning.
  • Add the brown sugar, sugar, cornstarch, cloves, allspice, nutmeg, and cinnamon and stir to coat all the slices.
  • Add in the chopped pecans and stir.
  • Pour the slices into a 9 x 13 pan that’s been sprayed with cooking spray and set aside.
  • In a medium-sized saucepan, place the butter, brown sugar, and heavy cream.
  • Continually whisk the sauce over low/medium heat for 10 minutes while it simmers.
  • Remove from heat and whisk in the vanilla. Pour the caramel sauce over the apples in the baking pan. (If you want, you can reserve a little bit of caramel to serve with the cobbler at the end)
  • To make the crust, whisk together the flour, brown sugar, sugar, baking powder, and salt.
  • Use a pastry cutter and cut in the butter until you get fine crumbs.
  • Pour in the boiling water and stir with a spoon to combine.
  • Spoon the crust over the top of the apples in an even layer and spread it to cover the entire pan. Place the pan in the oven and bake for 40-45 minutes, until the crust is golden brown.
  • Remove and let sit for about 10 minutes to slightly set before serving.
  • Serve with your favorite ice cream or leftover caramel sauce!
