Ingredients

1poundchicken breast
1cupmayonnaise
1tablespoonolive oil
1cupshredded cheddar

Instructions
Preheat oven to 370°F. Grease a large baking dish with olive oil.
Peel and slice potatoes very thinly.
Layer 1/3 of the potatoes and season with salt and pepper.
Slice and tenderize chicken, then layer half over the potatoes. Season and spread with mayonnaise.
Repeat layers of potatoes and chicken with seasoning and mayonnaise.
Add final layer of potatoes. Cover with foil and bake for 45 minutes.
Check tenderness of potatoes; bake an additional 15–20 minutes if needed.
Remove foil, top with cheese, and bake 15 more minutes.
Let cool slightly, garnish if desired, slice, and serve.
