  • Aluminum foil
  • Mixing spoon or spatula

Ingredients

  • 2 pounds potatoes
  • 1 pound chicken breast
  • 1 cup mayonnaise
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons dried herbs oregano, basil, thyme

Instructions

  • Preheat oven to 370°F. Grease a large baking dish with olive oil.
  • Peel and slice potatoes very thinly.
  • Layer 1/3 of the potatoes and season with salt and pepper.
  • Slice and tenderize chicken, then layer half over the potatoes. Season and spread with mayonnaise.
  • Repeat layers of potatoes and chicken with seasoning and mayonnaise.
  • Add final layer of potatoes. Cover with foil and bake for 45 minutes.
  • Check tenderness of potatoes; bake an additional 15–20 minutes if needed.
  • Remove foil, top with cheese, and bake 15 more minutes.
  • Let cool slightly, garnish if desired, slice, and serve.
