Instructions
Preheat your oven to 350 degrees Fahrenheit.
Line a large baking sheet with parchment paper or lightly grease it. Set aside.
Using a serrated knife, cut each croissant in half lengthwise, slicing about three-quarters of the way through. Do not cut all the way through — leave the two halves connected at the back like a hinge.
Take one cookie dough ball and break it into small pieces.
Spread the broken dough pieces evenly across the inside bottom half of one croissant.
Gently fold the top half of the croissant back over the bottom half to close it.
Take a second cookie dough ball and break it into small pieces.
Press those pieces gently onto the top surface of the croissant.
Place the stuffed croissant on the prepared baking sheet.
Repeat steps 3 through 9 with the remaining croissants and cookie dough balls until all 8 croissants are filled and topped.
Bake at 350 degrees Fahrenheit for 10 to 12 minutes, or until the tops are golden brown.
Remove from the oven and allow to cool slightly before serving.
