- To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil. 
- Beat with a hand mixer or stand mixer until a dough forms. 
- Cover with plastic wrap and refrigerate for 1 hour. 
- Preheat the oven to 350°F and line a large baking sheet with parchment paper. 
- Scoop about 2 tablespoons of dough for each cookie and drop them on the baking sheet, leaving 2 to 3 inches of space between each. 
- Bake in the oven for 10 minutes. The cookies will feel soft but will firm up as they cool. 
- Remove from the oven and transfer to a cooling rack. Let them cool completely. 
- Heat the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. 
- Transfer to a piping bag or a storage bag with the tip cut off. Drizzle the chocolate over the cookies. Alternatively, you can drizzle it with a spoon. 
- Sprinkle the Valentine’s Day sprinkles over the cookies while the chocolate is still soft. 
- Let the chocolate harden before serving. Enjoy!
