To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil.
Beat with a hand mixer or stand mixer until a dough forms.
Cover with plastic wrap and refrigerate for 1 hour.
Preheat the oven to 350°F and line a large baking sheet with parchment paper.
Scoop about 2 tablespoons of dough for each cookie and drop them on the baking sheet, leaving 2 to 3 inches of space between each.
Bake in the oven for 10 minutes. The cookies will feel soft but will firm up as they cool.
Remove from the oven and transfer to a cooling rack. Let them cool completely.
Heat the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
Transfer to a piping bag or a storage bag with the tip cut off. Drizzle the chocolate over the cookies. Alternatively, you can drizzle it with a spoon.
Sprinkle the Valentine’s Day sprinkles over the cookies while the chocolate is still soft.
