These Chocolate Covered Strawberry Cookies are soft and chewy cookies that are made from a simple box cake mix. Then they are topped off with a rich chocolate drizzle and festive sprinkles.

Equipment

Ingredients

  • 13.25 ounce strawberry cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 7 ounces milk chocolate melting wafers
  • 2 tablespoons Valentine’s Day sprinkles

Instructions

  • To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil.
  • Beat with a hand mixer or stand mixer until a dough forms.
  • Cover with plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  • Scoop about 2 tablespoons of dough for each cookie and drop them on the baking sheet, leaving 2 to 3 inches of space between each.
  • Bake in the oven for 10 minutes. The cookies will feel soft but will firm up as they cool.
  • Remove from the oven and transfer to a cooling rack. Let them cool completely.
  • Heat the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  • Transfer to a piping bag or a storage bag with the tip cut off. Drizzle the chocolate over the cookies. Alternatively, you can drizzle it with a spoon.
  • Sprinkle the Valentine’s Day sprinkles over the cookies while the chocolate is still soft.
  • Let the chocolate harden before serving. Enjoy!
