Ingredients

  • 1 pound sirloin steak thinly sliced
  • 4 tablespoons cornstarch divided
  • cup lite soy sauce divided
  • 2 tablespoons butter or oil
  • 1 tablespoon rice vinegar
  • 3 tablespoons brown sugar
  • 3 cloves garlic minced
  • 1 cup beef stock
  • 4 cups fresh broccoli florets
  • ¼ cup water

Optional Garnish

  • Scallions sliced
  • Sesame seeds

Instructions

  • In a large bowl, toss the sliced steak with 2 tablespoons of cornstarch, rice vinegar, and 1 tablespoon of the soy sauce. Set aside.
  • Heat butter or oil in a large skillet over medium-high heat.
  • Add the steak in a single layer (cook in batches if needed) and sear for about 1 minute per side until browned. Remove from the pan and set aside.
  • In a microwave-safe bowl, combine broccoli and water. Cover with a damp paper towel and microwave for 5 minutes. Drain and set aside.
  • Carefully wipe out any excess oil from the skillet.
  • Return the pan to medium-high heat and add the remaining soy sauce, beef stock, brown sugar, garlic, and remaining cornstarch.
  • Whisk continuously until the sauce begins to thicken.
  • Add the cooked beef and broccoli to the sauce and toss until everything is well coated and heated through.
  • Serve hot over rice or noodles and garnish with scallions and sesame seeds if desired.
