Copycat Starbucks Pumpkin Scones

Ingredients

  • 2 ¼ cup flour
  • cup brown sugar
  • 2 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup butter cold
  • ½ cup pumpkin puree
  • ¼ cup milk
  • 1 egg
  • 1 teaspoon vanilla

Icing

  • 2 cups powdered sugar plus 2 tablespoons
  • cup heavy whipping cream
  • 1 teaspoon pumpkin puree
  • ¼ teaspoon pumpkin pie spice

Instructions

  • Start by preheating the oven to 400 degrees.
  • In a medium bowl, mix together the pumpkin puree, milk, egg, and vanilla.
  • In another bowl whisk together the flour, brown sugar, granulated sugar, cinnamon, pumpkin pie spice, baking soda, baking powder and salt.
  • Grate in the cold butter.
  • Work the butter in quickly using your hands until it is coarse crumbs.
  • Carefully fold the wet ingredients into the dry ingredients until it is just combined.
  • Pour the dough out onto a lightly floured surface.
  • Fold the dough onto itself 2-3 times until the dough has come together.
  • Shape your dough into a circle that is about 1 inch thick.
  • Cut into 8 triangles.
  • Place on a parchment lined baking sheet.
  • Bake for 15-18 minutes until just golden.
  • Remove from oven.
  • Place on a rack to cool completely.
  • Once cool make your icing.
  • Whisk together the 2 cups of powdered sugar and heavy whipping cream.
  • Dip the tops of the cooled cones into the icing and set aside.
  • Once all the scones are dipped add the pumpkin spice, pumpkin puree and last 2 tablespoons of powdered sugar.
  • Place the pumpkin icing into a piping bag or ziploc bag with the corner snipped off.
  • Drizzle the pumpkin icing over the scones.
  • Let the icing set and serve!
