Ingredients
8ouncescremini mushrooms
2Tablespoonsbutter
½teaspoonsalt
½cupdry white wine
1shallot
4garlic cloves
1teaspoonfresh thyme
½teaspoononion powder
1cupbrothchicken or vegetable
1cupheavy cream
¾cupfreshly grated parmesan cheese
8ounceslinguini pasta
Fresh basil for garnishoptional
Instructions
Cook the pasta according to the directions on the package, drain and set aside.
Clean and slice the mushrooms. Place them in a large saute pan with sides over medium heat.
Dice the shallots and the garlic into very fine pieces and set aside.
Cook the mushrooms until their liquid has evaporated, add in the butter and salt and stir well and cook for another 1-2 minutes until mushrooms turn golden brown. Scoop out the mushrooms into a small dish and set them aside.
Add the wine to the saute pan and add the garlic and shallots. Let them simmer for 4-5 minutes, stirring occasionally.
Add the thyme, onion powder and broth to the pan. Stir to combine.
Add in the cream and let the sauce simmer for 5-6 minutes.
Add in the cheese and add back the mushrooms. Stir well.
Add in the drained pasta and toss to coat the pasta with the sauce.
Serve immediately garnished with fresh basil and extra parmesan cheese if desired.
Store any leftovers in an airtight container for up to 2 days.
