Equipment

  • knife and cutting board
  • slow cooker

Ingredients

  • 14 ounces kielbasa sausage sliced into thick rounds
  • 2 large russet potatoes peeled and cut into chunks
  • 1 small yellow onion sliced
  • 2 cups frozen green beans
  • ½ cup unsalted butter sliced
  • 1 packet Lipton onion soup mix
  • 1 ½ Cajun seasoning like Slap Ya Mama or Tony Chachere’s
  • ½ teaspoon garlic powder
  • ½ cup water or chicken broth optional, for extra moisture

Instructions

  • Spray your crock pot with cooking spray or use a liner.
  • Add the potatoes and onion to the bottom.
  • Layer in the kielbasa and green beans.
  • Sprinkle in the Lipton onion soup mix, Cajun seasoning, and garlic powder.
  • Top everything with the sliced butter. If desired, pour in ½ cup of water or broth to create more “swampy” broth.
  • Cover and cook on LOW for 6–7 hours or on HIGH for 3½–4 hours, until the potatoes are fork-tender and everything is coated in buttery broth.
  • Gently stir before serving. Taste and adjust salt, pepper, or Cajun seasoning as needed.
  • Serve with cornbread, rice, or crusty bread to soak up the broth.
