Easy Chicken Fried Rice Recipe

Ingredients

  • 2 tablespoons butter
  • 1 ½ cups frozen mixed vegetables
  • 1 egg
  • 3 garlic cloves
  • 1 tablespoon sesame oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cooked chicken breast
  • 3 cups cooked rice
  • 2-3 tablespoons soy sauce
  • 2 tablespoons sliced green onions

Instructions

  • Heat a skillet that has high sides over low/medium heat.
  • Add 1 tablespoon of butter and the frozen mixed vegetables and saute for about 2-3 minutes.
  • Whisk the egg with a fork. Push the vegetables to one side of the pan and add the remaining butter and egg.
  • Using a spatula, scramble the egg for about a minute before stirring together with the vegetables.
  • Add in the sesame oil, salt and pepper and squeeze the garlic through a garlic press and stir into the vegetables.
  • Cook for 1 minute.
  • Cut the chicken breast into bite sized pieces, add it to the pan along with the rice, soy sauce and green onions.
  • Stir all ingredients thoroughly together until well mixed.
  • Serve immediately.
  • Garnish with additional green onions if desired.
