Ingredients
2tablespoonsbutter
1 ½cupsfrozen mixed vegetables
1egg
3garlic cloves
1tablespoonsesame oil
¼teaspoonsalt
¼teaspoonblack pepper
1cooked chicken breast
3cupscooked rice
2-3tablespoonssoy sauce
2tablespoonssliced green onions
Instructions
Heat a skillet that has high sides over low/medium heat.
Add 1 tablespoon of butter and the frozen mixed vegetables and saute for about 2-3 minutes.
Whisk the egg with a fork. Push the vegetables to one side of the pan and add the remaining butter and egg.
Using a spatula, scramble the egg for about a minute before stirring together with the vegetables.
Add in the sesame oil, salt and pepper and squeeze the garlic through a garlic press and stir into the vegetables.
Cook for 1 minute.
Cut the chicken breast into bite sized pieces, add it to the pan along with the rice, soy sauce and green onions.
Stir all ingredients thoroughly together until well mixed.
