Gingerbread Brownies

These Gingerbread Brownies are soft, chewy, and topped with a sweet cream cheese frosting. It's a great dessert for your holiday table.

Ingredients

  • 1 cup butter melted
  • ½ cup sugar
  • 1 cup dark brown sugar
  • 2 eggs
  • 2 tablespoons molasses
  • 1 teaspoon vanilla
  • 2 ½ cups flour
  • 2 teaspoons ground ginger
  • ½ teaspoon ground cloves
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Frosting:

  • 4 ounces cream cheese softened
  • ¼ cup butter
  • 1 ½ cup powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl, whisk together the butter and the sugars until smooth.
  • Add in the eggs, molasses and vanilla and continue to whisk.
  • Add in the flour, ginger, cloves, cinnamon, baking powder and salt and mix until well combined.
  • Pour the batter into a 9x9 pan, either a non-stick pan or spray with cooking spray, and place in the oven and bake for 25-30 minutes, or until a toothpick comes out cleanly.
  • Let cool completely before frosting.
  • To make the frosting, place the cream cheese and butter in a medium sized bowl and beat with an electric mixer until smooth.
  • Add in the powdered sugar, vanilla and cinnamon and beat until smooth and creamy.
  • Use a spatula to spread an even layer of frosting over the top of the gingerbread brownies.
  • Slice and serve!
