Italian Drunken Noodles

Italian drunken noodles is a delicious blend of tender pasta, juicy Italian sausage, tomatoes, and aromatic basil. It makes a simple meal that is gourmet enough for guests.

Ingredients

  • 1 pound ground italian sausage
  • 1 medium sized onion
  • 2 medium green bell peppers
  • 4 garlic cloves
  • 1 teaspoon italian seasoning
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup white wine – or broth
  • 28 ounces crushed tomatoes
  • 2 teaspoons fresh basil
  • 2 teaspoons fresh parsley
  • Parmesan to garnish

Instructions

  • Cook pasta according to directions on the package, drain and set aside.
  • Thinly slice the bell peppers and remove stems and seeds and place in a large saute pan with tall sides.
  • Thinly slice the onion and add it to the pan.
  • Crumble the sausages into large pieces and add to the pan.
  • Cook over medium heat until the onion and peppers are soft.
  • Add the finely minced garlic, salt and pepper, and Italian seasoning and cook for about 30 seconds before adding the white wine.
  • Let it reduce by about half before adding the crushed tomatoes and fresh herbs. Stir to combine and let simmer on medium/low heat for about 10 minutes.
  • Add the cooked pasta into the sauce and stir well to coat the noodles.
  • Garnish with freshly grated parmesan cheese and fresh herbs of choice!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
