Ingredients

  • 3-4 jalapenos
  • 6 ounces cream cheese
  • 9 slices crispy bacon
  • 6 Monterey jack cheese slices
  • 6 Sharp cheddar cheese slices
  • 6 slices Italian bread
  • Cilantro
  • Butter

Instructions

  • Preheat oven to 375 degrees.
  • Slice each jalapeño in half lengthwise.
  • Using a spoon, scrape out the seeds and membranes. (Wear gloves to avoid irritation from the jalapeño oils.)
  • Spoon the cream cheese into each jalapeño half, filling them generously.
  • Place them on a baking sheet at bake for about 25 minutes.
  • Layer the cheese slices on the bread, then add the slices of bacon and chopped cilantro.
  • Once the poppers have cooled, cut into bite sized pieces and layer them on the sandwich and close.
  • Spread the butter on the top and bottom of the sandwich, and cook on a skillet until bread is browned and cheese is melted.
