Ingredients
1poundShrimp peeled and deveinedpeeled and deveined
12ounces andouille sausage sliced
3teaspoonsCajun seasoning
3cupsCauliflower rice cooked and drained well of excess water
¼Onionchopped
½cupCelerychopped
½Red bell pepperchopped
½cupDiced tomatoesdrained
1tablespoonTomato paste
2teaspoonsMinced garlic
Instructions
Preheat the oven to 375 degrees.
Add the cauliflower rice, onions, peppers, celery, diced tomatoes, tomato paste, minced garlic and 1 tsp of the cajun seasoning to a mixing bowl. Stir to combine.
Place the shrimp and sausage in another mixing bowl, and season with the remaining cajun seasoning.
Lay four long sheets of tin foil out on a flat surface.
Place ¼ of the cauliflower rice mixture into the center of each piece of tin foil.
Top with ¼ of the sausage and shrimp each.
Bring the long ends of each tin foil sheet at the top, and fold closed.
Roll up the remaining sides of the tin foil sheets, and fold over to form a packet.
Place the packets on a baking sheet, and bake for 20 minutes.
