Ingredients

For the marinade:

  • 2 pounds chicken pieces with bone
  • 1 ¼ cup buttermilk
  • ¼ cup Louisiana hot sauce
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • Chopped cilantro and chillies for garnishing optional

For the chicken:

  • 1 cup Louisiana hot sauce
  • 2 large eggs
  • cup water
  • 4 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 2 teaspoons pepper
  • 2 teaspoons paprika
  • Peanut oil for frying

Instructions

  • In a large bowl, combine the chicken with the hot sauce, garlic powder, salt and pepper. Add the buttermilk and let it soak for 2-3 hours.
  • Combine the eggs, hot sauce and water. In a third bowl, mix the flour, paprika, salt and pepper.
  • Remove chicken pieces from the buttermilk and dry it with a paper towel.’
  • Dredge your chicken into flour and then dunk into the egg mix. Dip back into your flour until coated.
  • Make sure to refrigerate for 30-40 minutes to keep the layer on.
  • In a large Dutch oven, put the oil to heat on 350°F. Fry 3-4 chicken pieces at a time for 15-18 minutes, until fully cooked and golden brown.
