Mixed Berry Cobbler

Ingredients

  • 8 cups frozen mixed berries
  • cup sugar
  • 1 Tablespoon lemon juice
  • 2 teaspoons lemon zest
  • 2 teaspoons cornstarch
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg

Topping:

  • ¾ cup flour
  • cup sugar
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup butter
  • 2 Tablespoons boiling water

Streusel:

  • ½ cup brown sugar
  • 2 Tablespoons flour
  • ½ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • Pinch of salt

Instructions

  • Preheat the oven to 375 degrees. Spray a 9x13 pan with cooking spray and set aside.
  • In a large bowl, mix the berries, sugar, lemon juice, zest, cornstarch and cinnamon and stir well. Pour the berry mixture into the bottom of the baking pan and set aside.
  • In a medium sized bowl, whisk the flour, sugar, baking powder and salt until mixed. Add in the butter in small pieces and crumble with your fingers. Pour in the boiling water and continue to mix with your hands until the mixture is in small pieces. Sprinkle over the top of the berries.
  • In another bowl, stir together the brown sugar, flour, cinnamon, melted butter and salt until well combined. Sprinkle the mixture over the top of the cobbler layer.
  • Place the pan in the oven and bake for 55-60 minutes, until the top is golden brown and bubbly. Remove and let cool slightly before serving. (Goes great with vanilla ice cream!)

Notes

Store any leftovers in an airtight container for up to 3 days.
