Instructions
Preheat the oven to 400°F. Line a 17 x 12-inch rimmed baking sheet with parchment paper.
Spread the shredded parmesan into an even layer across the parchment paper.
Arrange the onion slices in a single layer over the cheese, with edges touching but not overlapping.
Brush the tops of the onions with the olive oil.
In a small bowl, mix the garlic powder, onion powder, smoked paprika, cumin, black pepper, and crushed red pepper flakes, if using. Sprinkle evenly over the onions. Add a light pinch of salt and scatter the thyme leaves on top.
Bake for 18 to 20 minutes, or until the onions are lightly golden and the cheese is browned and crispy around the edges.
Cool on a wire rack for 10 minutes to help the chips set and crisp further.
