Ingredients

  • 7 ounces parmesan cheese shredded
  • 3 small yellow onions sliced into 1/4-inch rings
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes optional
  • 1 tablespoon fresh thyme leaves
  • pinch salt

Instructions

  • Preheat the oven to 400°F. Line a 17 x 12-inch rimmed baking sheet with parchment paper.
  • Spread the shredded parmesan into an even layer across the parchment paper.
  • Arrange the onion slices in a single layer over the cheese, with edges touching but not overlapping.
  • Brush the tops of the onions with the olive oil.
  • In a small bowl, mix the garlic powder, onion powder, smoked paprika, cumin, black pepper, and crushed red pepper flakes, if using. Sprinkle evenly over the onions. Add a light pinch of salt and scatter the thyme leaves on top.
  • Bake for 18 to 20 minutes, or until the onions are lightly golden and the cheese is browned and crispy around the edges.
  • Cool on a wire rack for 10 minutes to help the chips set and crisp further.
  • Break apart and serve warm.
