Peach Pie Bars

Ingredients

Crust

  • 3 cups flour
  • 1 ½ cups sugar
  • ½ teaspoon salt
  • 1 ½ cups butter

Filling

  • 4 eggs
  • ½ cup brown sugar
  • 1 cup sour cream
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ¾ cup flour
  • 3 cups diced fresh peaches

Glaze

  • 1 cup powdered sugar
  • 2-3 Tablespoons heavy cream
  • ½ teaspoon vanilla

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 x 13 pan with cooking spray and set aside.
  • In a large bowl, whisk together the flour, sugar and salt.
  • Cut in the butter using a pastry cutter until you have a crumbly mixture.
  • Remove about 1 ½ c to save for the top crust. Press the remaining dough into the bottom of the pan and press down into an even layer.
  • Place in the oven and bake for 13-15 minutes, until golden brown.
  • Remove and let cool.
  • To make the filling, whisk the eggs in a large bowl.
  • Add in the sour cream, nutmeg, cinnamon, salt, vanilla and flour.
  • Whisk until smooth.
  • Use a spatula and fold in the diced peaches. Pour the filling over the crust and smooth into an even layer.
  • Take the remaining crust and sprinkle over the top of the peach mixture.
  • Place the pan back into the oven and bake for 55-60 minutes, until golden brown. Remove and allow to cool.
  • To make the glaze, place the powdered sugar, 1 tablespoon of cream and the vanilla into a medium sized bowl and whisk.
  • Continue to add heavy cream until you get the consistency desired.
  • Drizzle over the top of the bars.
  • Slice and serve!

Notes

Store any leftovers in an airtight container for up to 3 days.
