Pimento Grilled Cheese

Ingredients

  • 8 slices sourdough bread
  • 2 Tablespoons cream cheese
  • 1 cup shredded extra sharp cheddar cheese
  • cup mayonnaise
  • 1 Tablespoon sour cream
  • 4 ounces pimento peppers drained
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • teaspoon black pepper
  • ½ teaspoon salt

Instructions

  • Heat a flat frying pan over medium heat.
  • In a medium sized bowl, mix together the cream cheese, cheese, sour cream, peppers, onion powder, garlic powder, salt and pepper.
  • Lay the sourdough slices out and spread one side with mayonnaise. Flip it over and add about ¼ of the pimento cheese mixture and spread it over the slice of bread. Top it with another slice and bread and spread a layer of mayonnaise over the top of the bread, so the mayonnaise is on the outer side of the sandwich.
  • Place the sandwich onto the heated frying pan and continue making the remainder of the sandwiches.
  • Fry each sandwich about 2-3 minutes, each side, flipping halfway through so both sides brown evenly and the inside melts.
  • Remove and slice and serve immediately.
