Potato and Sausage Chowder

Ingredients

  • 16 ounces Italian sausage
  • 1 tablespoon oil
  • 1 cup diced onions
  • ½ cup diced celery
  • ½ cup diced carrots
  • ½ cup diced red bell pepper
  • 3 cloves garlic minced
  • 3 tablespoons flour
  • 4 cups vegetable broth
  • 1.5 pounds little yellow potatoes cut into chunks
  • 1 ½ cup heavy cream

Instructions

  • In a large soup pot, add the sausage and oil and break into pieces and cook on a medium to high heat until the sausage is completely cooked through and browned.
  • Add the onion, celery, carrots and red bell pepper. Stir and cook for 5 minutes.
  • Add the minced garlic and stir for 30 seconds.
  • Add the flour and stir again.
  • Add the vegetable broth and stir.
  • Add the chunks of potatoes and stir once again.
  • Let come to a boil and then simmer on low for 15 minutes.
  • After the 15 minutes, add in the heavy cream and stir.
  • Pour into bowls, sprinkle with fresh chopped parsley. (optional) and serve and enjoy!
