Pumpkin Cookies Wtih Cream Cheese Frosting

These Pumpkin Cookies are soft, chewy, and full of warm spices. And, then they are topped off with a cream cheese frosting that is unbelievably delicious.

Ingredients

  • 2 ½ cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 Tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • ¾ cup butter softened
  • ¾ cup sugar
  • ½ cup brown sugar
  • 1 ¼ cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla

Frosting:

  • 8 ounces cream cheese softened
  • ¼ cup butter softened
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • 1 ½ cup powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a small bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • In a large bowl, using an electric mixer, beat the butter, sugar, and brown sugar until light and fluffy.
  • Add in the pumpkin puree, egg, and vanilla, and cream some more.
  • Add in dry ingredients and mix just until combined.
  • Use a cookie scoop (about a tablespoon in size) and drop cookies onto a baking tray about 2 inches apart.
  • Gently press down to flatten each cookie slightly.
  • Place in the oven and bake for 12-14 minutes, just until the edges turn slightly golden.
  • Remove and let cool completely.
  • To make the frosting, place the cream cheese and butter in a medium-sized bowl and beat with an electric mixer.
  • Add in the vanilla, cinnamon, and powdered sugar and beat until smooth and creamy.
  • Either use a spatula and spread a small amount of frosting on top of each cookie, or place the frosting into a piping bag with a small round tip and pipe the tops of each cookie with the frosting.
