6chicke thighsor assorted chicken pieces of your choice
2mediumlemons
⅓cupextra virgin olive oil
fresh ground pepperto taste
sea saltto taste
2 tbspground oregano
9garlic clovesminced
6medium white potatoescut into wedges
½ medium onionsliced
Instructions
Preheat oven to 350 degrees. Salt chicken breast and cook chicken in 2 tbsp olive oil until just browned on both sides. About 3 minutes each side.Lay the chicken on the sheet pan. Lay potatoes and onion around chicken pieces In a small bowl mix lemon juice, olive oil, oregano, and minced garlic. Pour over chicken and potatoes making sure potatoes are all covered. I use a basting brush to make sure chicken is well covered.Roast the chicken and potatoes until both are golden and crispy and the chicken is cooked through, about 50 minutes - 1 hour depending on your oven.
