Low Carb Cheesy Cauliflower Spinach Bake  -  a delicious low-carb side this that is one of our favorite side dishes.  It is cheesy and creamy and full of flavor!

  • 1 small head cauliflower cut in pieces
  • 5 oz baby spinach
  • 4 oz sour cream
  • 1/2 cup parmesan cheese
  • salt and pepper to taste
  • 3 tbsp butter
  • 1 cup monterey jack cheese or mozzarella cheese
  • 8-10 grape tomatoes cut in half (optional)
  • 1 tsp italian seasoning


  1. In a large pot of salted boiling water add the cut cauliflower. Cook for about 10 minutes. Drain well. Add 1/2 cup monterey jack or mozzarella cheese and mix.

    Preheat oven to 350 degrees

    In a glass greased baking dish add cauliflower then top with baby spinach. Mix sour cream and parmesan cheese and spread over spinach

    Top with the remaining monterey jack or mozzarella , then sliced tomatoes and sprinkle with italian seasonings.

    Bake at 350 for 20 minutes or so.
