Easy Skillet Enchilada Pasta -  A one pan meal that makes a weeknight dinner really simple and quick. Who doesn't love a quick and delicious meal during the week? We sure do!!

  • 1 1/4 lb ground beef
  • 1 10 oz enchilada sauce
  • 3/4 tsp chili powder
  • 1/4 tsp cumin
  • 4 oz diced green chiles
  • 4 oz cream cheese, cubed
  • 1 cup frozen corn kernels, thawed
  • 1/2 cup sour cream
  • 2 cups cheddar or Monterey Jack cheese
  • 3/4 lb rotini noodles
  • salt and pepper to taste


  1. Cook pasta in boiling salted water

    While the pasta is cooking  brown the ground beef. Drain the fat. Season  with salt and pepper, corn, cumin, chili powder. Add enchilada sauce and simmer for 5 minutes.

    Add cream cheese , chilies, sour cream and stir together

    Add in cooked pasta

    Add cheese and stir until melted. Remove from cooktop and serve.
