Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 tsp garlic, minced
  • 1 lb. ground beef
  • 1 tbsp tomato paste
  • 1 ¼ cup beef broth
  • 16 oz. tomato sauce
  • 15 oz. can diced tomatoes
  • 1 tsp Italian seasoning
  • 2 tsp paprika
  • 1 ½ cups elbow noodles, uncooked
  • 1 cup extra-sharp cheddar cheese, shredded
  • salt and pepper to taste
  • chopped fresh parsley

Instructions

  • 1.Heat oil in a large skillet over medium heat. Cook onion for about 5 minutes, or until slightly softened. Add garlic and cook a minute longer.
    2.Crumble ground beef in the pan and season with salt and pepper. Cook for about 8 minutes then drain the fat.
    3.Add in tomato paste and stir to coat, then pour in broth, tomato sauce, and diced tomatoes. Stir in Italian seasoning and paprika, and macaroni.
    4. Cook pasta according to box directions.
    4. Bring to a simmer and cook, stirring occasionally, for about 12-14 minutes. Add in cooked pasta. Add in cheese and remove from heat. Garnish with parsley.
