Equipment

  • slow cooker
  • large skillet

Ingredients

  • 2-3 pound pork loin roast
  • 2 tbsp vegetable oil
  • 8 cloves garlic minced
  • ¼ cup soy sauce
  • ½ cup brown sugar
  • 20 oz pineapple chunks with juice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • Parsley optional

Instructions

  • Mix together all the seasonings, the salt, pepper, onion powder and paprika. Dry rub it all over the pork.
  • Pour the oil into a medium- large pan on high heat, let the pan warm up a bit and then place the pork onto it. Only for 1-2 minutes on each side, just to sear it.
  • Once done place into a 8 quart slow cooker. Rub the garlic all over the top of the pork, be careful not to burn yourself.
  • Add the soy sauce and pineapple chunks and all the juice.
  • Sprinkle the brown sugar all over the top of the pork and sides.
  • Put lid on and cook on low for 4-6 hours.
  • Slice or shred and serve!
