Snowman Truffles

Equipment

  • large bowl
  • Cookie scoop
  • small dish
  • baking sheet lined with parchment paper - to decorate on

Ingredients

  • 4 cups finely shredded coconut
  • 14 ounces sweetened condensed milk
  • ½ teaspoon vanilla

For decorating

  • ¼-⅓ cups white chocolate chips
  • 2 tablespoons mini m & m’s
  • Cinnamon sticks
  • Candy belts/straps

Instructions

  • In a large bowl, mix the coconut, condensed milk and vanilla and stir until well mixed.
  • Use a cookie scoop to make 12 large balls, roll to make a circle.
  • Roll the ball in extra coconut to coat the outside.
  • Repeat and make 12 slightly smaller balls for the heads of the snowmen, also roll in coconut.
  • Melt the white chocolate in the microwave to use as “glue”.
  • Place a little bit of melted chocolate between the base and the head of the snowmen to connect them.
  • Let them dry for a minute or two.
  • Decorate the snowman with the m&m’s, break the cinnamon sticks for arms, and wrap the candy belts around as scarves.

Notes

Quarter the brown m&m’s to use as eyes. If they will not stick, dip them in the melted white chocolate and press into the snowman.
Remove cinnamon stick arms before eating! (Or alternately use pretzel sticks for arms.)
