Ingredients

  • 1 cup butter softened
  • 1 ¼ cups sugar
  • 2 eggs
  • ½ teaspoon almond extract
  • 1 ½ teaspoons vanilla extract
  • 3 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Frosting
  • ¾ cup butter softened
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • Sprinkles

Instructions

  • In a large bowl, cream butter and sugar with an electric mixer for about 2 minutes. Add eggs, almond extract, and vanilla extract. Beat until light and fluffy.
  • Add flour, baking powder, and salt. Mix until combined.
  • Cover and chill the dough for 30 minutes.
  • Preheat oven to 350°F. Use a 1.5 tablespoon cookie scoop to portion dough and place on a baking sheet about 2 inches apart.
  • Bake for 10 to 12 minutes, just until the edges begin to turn golden. Let sit on the tray for 1 minute, then transfer to a cooling rack to cool completely.
  • In a large bowl, beat softened butter for about 2 minutes until lighter in color. Add powdered sugar and vanilla extract. Beat until smooth and creamy.
  • Spread frosting on cooled cookies with a knife, or pipe swirls using a piping bag (2D tip). Add sprinkles on top.

Notes

  • Don’t overbake, pull them as soon as edges are lightly golden for the softest texture.
  • Add food coloring to the frosting for seasonal or holiday themes.
  • Chill longer if the dough feels sticky or warm.
