Instructions
In a large bowl, cream butter and sugar with an electric mixer for about 2 minutes. Add eggs, almond extract, and vanilla extract. Beat until light and fluffy.
Add flour, baking powder, and salt. Mix until combined.
Cover and chill the dough for 30 minutes.
Preheat oven to 350°F. Use a 1.5 tablespoon cookie scoop to portion dough and place on a baking sheet about 2 inches apart.
Bake for 10 to 12 minutes, just until the edges begin to turn golden. Let sit on the tray for 1 minute, then transfer to a cooling rack to cool completely.
In a large bowl, beat softened butter for about 2 minutes until lighter in color. Add powdered sugar and vanilla extract. Beat until smooth and creamy.
Spread frosting on cooled cookies with a knife, or pipe swirls using a piping bag (2D tip). Add sprinkles on top.
Notes
Don’t overbake, pull them as soon as edges are lightly golden for the softest texture.
Add food coloring to the frosting for seasonal or holiday themes.
